I thought I'd share with all of you
this amazing Alfredo sauce recipe (that I found online) that my boyfriend and I
did almost every weekend this summer. It's a wonder I didn't put on 50 lbs!!
Here's the recipe...
Ingredients:
- 3 tablespoons sweet butter
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 2 cups heavy cream
- 1/4 teaspoon white pepper
- 1/2 cup grated parmesan cheese
- 3/4 cup mozzarella cheese
Directions:
- Melt butter in medium saucepan with olive oil over
medium/low heat
- Add the garlic, cream, white pepper and bring mixture
to a simmer.
- Stir often.
- Add the Parmesan cheese and simmer sauce for 8-10
minutes or until sauce has thickened and is smooth.
- When sauce has thickened add the Mozzarella cheese and
stir until smooth. STIR FREQUENTLY.
Now I tweak that a
little bit. I usually cook it with linguini and cook some vegetables on the
side to put in the sauce. I usually like onions, mushrooms and LOTS AND LOTS of
broccoli! This summer, since seafood was in season, we usually added a bottle
of bar clams (Mmmm) and some shrimps, scallops, crab... anything that was on
sale. We also did it with chicken once. Oh and the measurements for the cheese
are just approximate... I usually add more until the sauce is as thick as I
want it. Another AWESOME thing we did with this is put the sauce in a seafood lasagna...
My mouth is watering just thinking about it!
Here's a picture of what
it looks like when it's done, (please ignore the giant cookie next to it!) This
is double the recipe - after my boyfriend and I had our share (since we usually eat a lot and offer some to our family).
